"I haven’t," Tian Peng replied. "Why not press the noodles with a mold instead of chopping directly with a knife? The noodles shaved this way might vary greatly in size and thickness, affecting the texture significantly."

His point was valid; noodles that varied in size and thickness could have a variety of textures in the mouth, not only affecting the taste but also making it difficult for the flavors of the broth to permeate evenly.
