Food Stall: Customers Chase Me across the Country
Chapter 491 - 489: Salt and Pepper Duck
Tuesday, the weather is bright, with a gentle breeze.
Whether it was the irresistibility of food or curiosity about the highly praised Red Mountain Forest Zoo, there were already a lot of people queuing up by 7 o’clock.
Wang Fan learned from yesterday’s near-exhaustion experience, so today he’s planning something simple and easy.
Of course, simple and easy never means tasteless.
Today, he got clever, enjoying a nice breakfast before opening the shop. As he opened the door, he saw the long queue and couldn’t help but scratch his head.
This queue sure is long, so early in the morning you can’t see the end of it. How can this go on all day?
Should I limit the quantity?
Wang Fan rubbed his chin thoughtfully.
Cheng Feifan, being a university student on vacation, had plenty of time to play during summer break, so he came to queue early again.
Seeing Wang Fan like that, he couldn’t help but say, "Brother Wang, we came all this way, you’re not considering the unkind act of limiting the quantity, are you?"
Wang Fan looked at him, surprised, "How did you know I was thinking that?"
Cheng Feifan teased, "Why don’t you look in the mirror? Besides a handsome face, it clearly says ’I want to limit the quantity’ on your forehead!"
Wang Fan cleared his throat, "Some things, knowing them is enough, no need to say them out loud!"
"Brother Wang, I advise you not to have such dangerous thoughts!"
Cheng Feifan said, then leaned closer to Wang Fan and whispered, "If you limit them but not me, I promise not to tell!"
Wang Fan shrugged, "Forget it, today’s dish is quick to make, so there’s no need to limit. Wait a bit, I’ll start now."
With that, he took out today’s duck meat.
Mainly duck breast and deboned duck leg meat, but today it hadn’t been cut into pieces.
Wang Fan took out his knife, and after a flurry of chopping sounds like raindrops on a board, the duck meat was sliced into pieces about four millimeters thick, quickly filling a large bowl.
He then took out satay sauce and pepper powder, poured them directly into the bowl.
Next, the de-aromatizing trio of scallion, ginger, and garlic, plus lots of spicy green peppers, were all diced.
There was a large amount of these, chopping them all took Wang Fan about ten minutes.
But one must say, his adept handling of the ingredients was quite a sight to behold.
Quite a few people had taken out their phones to record, usually filming the chopping board, but the occasionally tilted angles revealed their little intentions.
Many people think street food is dirty, and what Wang Fan was doing could also be considered street food.
But the food truck was spotless, his chef coat was pure white, his fingers were fair and slender, he was bright and handsome, and the ingredients he used were clean and fresh. Cheng Feifan thought even the emperor couldn’t say it was "unclean."
Clean and hygienic, folks!
The duck meat marinated for 10 minutes was taken out by Wang Fan, covered with a thin layer of starch, and the oil in the pot was already steaming hot. The moment the duck meat coated in starch was put in, the oil in the pan started bubbling fiercely.
"Sizzle, sizzle, sizzle..."
The sound of frying continuously echoed, and the rich aroma of the meat was released instantly, making those who hadn’t eaten breakfast and were queuing up gulp.
Taking advantage of this, Wang Fan continued slicing meat, marinating one bowl while frying another, keeping a perfect rhythm.
Putting down the knife, he wiped his hands with a wet wipe, took out a new large bowl, placed in the scallion, ginger, garlic, and peppers, sprinkled some cumin and pepper-salt, then scooped a ladle of oil from the frying pan, "sizzle" and all were drizzled onto the garnish.
He then used a ladle to scoop out the duck meat that was fried golden brown on both sides and dumped it into the bowl.
He picked up the bowl, gave it a few strong shakes, then used a spoon to stir it carefully, and this pot of pepper-salt duck was made.
Cheng Feifan’s eyes were already green, like a wolf starved for three days and nights.
Staring at the duck meat coated with red chili flakes, green scallion bits, and golden ginger bits, he felt like his mouth was definitely holding a Huangguoshu Waterfall.
So aromatic!
A different aroma from yesterday but equally captivating.
"Brother Wang, I want a large portion."
Wang Fan scooped a full spoon into a disposable bowl and asked, "Want to add more spice?"
Cheng Feifan hesitated; he wasn’t very good with spicy food, "Is it spicy now?"
Wang Fan shook his head, "It’s just mildly spicy, just a bit of spicy green pepper added."
"Would it taste better with more spice?"
"The flavor would certainly be more unique."
"Then add some more spice for me."
Wang Fan picked up the spice jar filled with chili flakes, gently sprinkled some into the bowl, then stuck a bamboo skewer into the meat.
Cheng Feifan paid the bill happily, carrying the meat towards the ticket counter. Having found it interesting yesterday, he planned to explore it again today.
As he walked, he already had the piece of duck meat skewered on a toothpick in his mouth.
The moment the duck meat entered his mouth, a strong aroma of meat and seasoning flooded his senses.
But before he could savor it well, a fiery sensation quickly took over.
"Oh crap!"
Cheng Feifan’s eyes bulged, his whole face turning a warm red.
He felt like he just ate a ball of fire.
Just as he was about to spit the duck out, the unique aroma began controlling his brain, making his tongue disobey him.
Cheng Feifan quickly began to chew.
The thin crispy shell was indeed very thin, cracking with only a slight crunch.
The duck meat inside had lost moisture from frying, resembling beef jerky but softer. The duck skin that wasn’t removed was relatively softer, with a very tender chew.
The four mixed vegetables were just cooked, clinging to the duck meat, also starting to crumble with the chewing, releasing rich aromas of scallion, ginger, garlic, and chili, totally different from the first spicy sensation.
Cheng Feifan’s eyes widened more and more, feeling the duck meat getting tastier with each chew.
Every bite allowed the various seasonings to blend more with the duck, the satay sauce, and cumin giving the duck an intense flavor.
It called for a can of beer!
After the initial wave of spice subsided, Cheng Feifan somewhat got used to the spice level. Though he was sweating profusely, it didn’t stop him from taking on the second piece of duck.
It was too delicious to resist; he couldn’t control himself!
But considering his stomach and rear, he bought a bottle of yogurt from a small shop when buying the ticket.
Even though it felt like a perfect pairing with alcohol, he had no interest in drinks.
And that sip of cold yogurt soothed the fiery spice instantly.
Having learned his lesson, when he skewered the duck again, he carefully shook off the red chili flakes, blew it a bit, and then put it in his mouth again.
"Boss Wang wouldn’t be taking revenge on me, would he?"
Cheng Feifan scratched his head and shook it.
"No way, how could I think such ill of someone? He asked my opinion before adding chili, I insisted on adding more spice, so how can I blame him?"
After drinking a big gulp of cold yogurt, Cheng Feifan felt alive again.
Looking at the time, he exclaimed, "Oh, hurry up, the koala weight check is about to start; I didn’t catch it yesterday."
